Valentine's Day Dinner-In Pt 4: Shrimp Scampi Linguine




Ingredients:

  • 8 oz linguine or your preferred pasta

  • 1 pound large shrimp, peeled and deveined

  • 4 tablespoons unsalted butter

  • 4 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1/2 teaspoon red pepper flakes (adjust to taste)

  • Zest of 1 lemon

  • Juice of 1 lemon

  • 1/4 cup dry white wine (optional)

  • Salt and black pepper to taste

  • Fresh parsley, chopped, for garnish

  • Grated Parmesan cheese for serving (optional)



Instructions:

1. Cook Linguine:

  • Cook the linguine in a large pot of salted boiling water according to the package instructions until al dente. Reserve about 1/2 cup of pasta cooking water before draining.

2. Prepare Shrimp:

  • Pat the shrimp dry with paper towels and season with a pinch of salt and black pepper.

3. Sauté Shrimp:

  • In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.

  • Add the seasoned shrimp to the skillet and cook for 1-2 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

4. Make the Scampi Sauce:

  • In the same skillet, add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil.

  • Add minced garlic and red pepper flakes to the skillet. Sauté for about 1 minute until the garlic becomes fragrant but not browned.

5. Deglaze with Wine (Optional):

  • If using white wine, pour it into the skillet to deglaze, scraping up any browned bits from the bottom. Allow it to simmer for 1-2 minutes.

6. Add Lemon Zest and Juice:

  • Add the lemon zest and lemon juice to the skillet. Stir to combine with the garlic and oil mixture.

7. Combine Shrimp and Pasta:

  • Return the cooked shrimp to the skillet, tossing them in the scampi sauce until they are well-coated.

8. Add Linguine:

  • Add the cooked linguine to the skillet, tossing everything together. If needed, add some of the reserved pasta cooking water to loosen the sauce.

9. Season and Garnish:

  • Season the Shrimp Scampi Linguine with additional salt and black pepper to taste. Garnish with chopped fresh parsley.

10. Serve:

  • Serve the Shrimp Scampi Linguine immediately, optionally topped with grated Parmesan cheese.
