Chicken Parmesan - A Meal for Any Occasion

You guys know that I love off script request, so of course I jumped at the opportunity to create a surprise lunch for two. The customer's partner is a huge fan of the Chicken Parmesan, so of course I compiled a menu with this, Garlic Parmesan rolls (recipe for the rolls here), and Birthday Cake cookies (currently replaced with the Spooky Cookie-will be available online soon).

Chicken Parmesan Recipe
Ingredients:
1 pack of Chicken Breast
2 eggs (4 if the chicken breast are thick)
Bread Crumbs
Salt
Pepper
Garlic Powder
Onion Powder
2 cups of flour
Vegetable Oil
Parmesan Cheese
Mozzarella Cheese
Two jars of your favorite pasta sauce (or make your own!)
After lightly cleaning my chicken breast, and place some vegetable oil in a frying pan. Most folks lightly coat the pan but I honestly love a little crunch, so I fried my breast well but not hard. (I know they are going to bake later but trust me- when the outer layer is firm the chicken will not be soggy once soaked in sauce.)
While the oil heats up prepare three bowls and one tray. One bowl you're going to whisk your eggs very well and sit to the side. The second bowl you're going to combine about a cup of bread crumbs and a cup of fresh Parmesan cheese. The third bowl will be your flour and seasoning mixed together.
Lay your chicken out on the tray and cut your chicken breast in half. (This recipe can provide about 8 servings.) Lightly season (I like to double season.), the chicken and then coat in the seasoned flour. Dip the chicken in your egg and allow access egg to drip off as you pick it up. Finally generously coat your chicken with the breadcrumb mixture. Sit the chicken on the tray and prep the rest of the chicken in that order.
Once coated, fry your chicken breast and do not flip to the second side until the edges of the chicken are brown. (dark brown! You may set your fire to about a 5 and/or in between medium and low fire so that you do not cook it too fast and end up with raw meat in the center.)
While your chicken fries, set your oven to 425 degrees and grab a 9 by 13 baking dish. Coat the bottom of the dish with a generous amount of pasta sauce, and once the chicken breast are dried from the frying, place in dish. Cover each breast with about two tablespoons of sauce in the center of the chicken. Sprinkle mozzarella and parmesan on top of the chicken (as much as you desire).
Allow the chicken to bake uncovered for about 25 minutes or until the cheese has turn light brown.
Feel free to serve over your favorite pasta, rice, or mash potatoes! I served this dish over fettuccine and I received nothing but praise from my customers. I love bringing joy to you guys one meal/ dessert at a time.
