Valentine's Day Dinner-In Pt 10: Greek Lamb Chops with Tzatziki



Ingredients:

For the Lamb Chops:

  • 8 lamb chops

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried rosemary

  • Salt and black pepper to taste

  • Lemon wedges for serving

For the Tzatziki:

  • 1 cup Greek yogurt

  • 1/2 cucumber, grated and drained

  • 2 cloves garlic, minced

  • 1 tablespoon fresh dill, chopped

  • 1 tablespoon fresh mint, chopped

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon lemon juice

  • Salt and black pepper to taste



Instructions:

1. Marinate Lamb Chops:

  • In a bowl, combine olive oil, minced garlic, dried oregano, dried rosemary, salt, and black pepper.

  • Coat each lamb chop with the marinade, ensuring they are well covered. Allow them to marinate for at least 30 minutes, or longer for more flavor.

2. Preheat Grill or Pan:

  • Preheat your grill or a grill pan over medium-high heat.

3. Grill Lamb Chops:

  • Grill the lamb chops for approximately 3-4 minutes per side for medium-rare, or adjust the cooking time to your desired doneness.

  • Remove the lamb chops from the grill and let them rest for a few minutes before serving.

4. Prepare Tzatziki:

  • While the lamb chops are grilling, prepare the tzatziki. In a bowl, combine Greek yogurt, grated and drained cucumber, minced garlic, chopped fresh dill, chopped fresh mint, extra-virgin olive oil, lemon juice, salt, and black pepper.

  • Mix well, and refrigerate until ready to serve.

5. Serve:

  • Arrange the grilled lamb chops on a serving platter.

  • Serve the lamb chops with a generous dollop of tzatziki on the side.

  • Garnish with fresh herbs and lemon wedges.
