Am I the only one that cringes at those frozen lasagnas in the grocery store? On TV they look a little appealing but I don't think I will ever be convinced that they are truly appetizing.
Without delay, I give you my homemade recipe for lasagna that has been passed down in my family. It's not completely authentic Italian but trust me, I have yet to hear any complaints about this dish. Check out the end results in the video below! I don't know about you, but I love browned cheese!!
Ingredients:
2 boxes of Lasagna Noodles
Ground beef (if vegetarian you can substitute with mushrooms, peppers and sweet onion)
1 bag each of Shredded Sharp and Mozzarella Cheese (the size of bag is according to how large of a lasagna you're going to make)
Fresh Garlic
1 bag or container of Fresh or Frozen Spinach
Ricotta Cheese (16 oz)
Two Eggs
Oregano
Basil
Thyme
2-3 jars of Pasta Sauce
Parmesan Cheese
Note:
This recipe can feed up to 4-6 people if you are making a baking dish standard size of 9 by 13 inch pan.
Steps:
Preheat oven to 400 degrees.
Take a large boiler and fill with water until it is about a quarter full. Place under medium heat and add about a teaspoon of salt.
Prepare and season your ground beef (or your choice of protein) with salt and pepper. Cut a fresh clove of garlic and mix into the ground beef.
Cook ground beef on medium heat. Stir as necessary until it becomes a light brown all over.
While the ground beef is cooking, take a small boiler and sauté one bag of spinach with your choice of seasonings. If you are using frozen just make sure the spinach is unthawed and ready to be assembled.
Take ricotta cheese and dump the entire container in a bowl. Add two eggs, basil, thyme, and oregano to taste. Stir together until the eggs are completely mixed in.
At this point, the pot of water should have come to a boil, which you can now add your lasagna shells. Add in a couple drops of extra virgin olive oil so that the shells do not stick. If you do not have any oil on hand, drop in a tablespoon of butter. Cook shells until the noodles are soft.
Once noodles are done, drain and rinse with cool water.
Take your baking pan and assemble noodles horizontally so that it can cover the pan.
Add in the following ingredients in order: ground beef, spinach, ricotta cheese mix, cover this with pasta sauce, sprinkle mozzarella, sharp, and parmesan cheese until it covers the pasta sauce.
Assemble the next noodles vertically and repeat the previous steps until the pan is filled.
Set completed pan in oven and allow the lasagna to bake for at least 30-45 minutes or until the cheese is brown.
Last Notes:
Do not fill pan up to the top! Leave some room because the pasta sauce will bubble up to the top and you do not want the sauce to spill to the bottom of the oven.
If you do not like spinach, you don't have to use it! I just think it adds a nice touch. You can also feel free to add mushrooms and other items to the meat version as well!
