Chasing Summer Rasta Pasta

It's winter time in Chicago, but this pasta is sure to give you the must needed dose of summer you need.



Ingredients:

  • 1 pound of chicken breast or tenders

  • 1 box of Rigatoni (or whichever pasta you prefer)

  • 1 cup of chopped red, yellow, orange, and green bell peppers

  • 3 cups of fresh spinach

  • 2 cups of sliced mushrooms

  • 1 1/2 cups of heavy whipping cream

  • 1 stick of butter

  • Salt to taste

  • Pepper to taste

  • 1 teaspoon of Walkers Wood Jerk Seasoning

  • 3 16 oz bags of Parmesan Cheese

  • 1cup of hot water

  • 1 tablespoon of extra virgin olive oil 

Note:

This recipe can feed up to 6-8 people depending on portion size.

 

Steps:

  1. Clean and prepare chicken as you desire.

  2. Fill a boiler with at least 3-4 cups of water, add in salt, place top on boiler and allow to come to a boil.

  3. Season chicken with salt, pepper and a teaspoon of Walkers Wood Jerk Seasoning. Cover seasoned chicken, place in the refrigerator, and allow to marinate for 30 minutes.

  4. Once the water comes to a boil, pour in the box of pasta, stir in olive oil and allow the pasta to cook. Once the pasta is done, remove it from the heat and drain the water out. Place pasta on the side.

  5. Coat a skillet with a tablespoon of olive oil and cook chicken on both sides until done.

  6. Once the chicken is done, remove the chicken and throw in the stick of butter. Allow the butter to melt and pour in the cup and a half of heavy whipping cream.

  7. Stir together and add the three bags of parmesan cheese. Season cheese with salt, and pepper, and pour in the cup of hot water to break the cheese sauce down.

  8. Turn the heat down on the cheese sauce and add in the chopped peppers, mushrooms and fresh spinach. Allow this to cook on low for 7 minutes.

  9. Place cooked pasta back into boiler and season with salt and pepper to taste. Cut up chicken and mix into pasta. Once the pasta sauce is done, gradually it pour over into the pasta and stir as needed.

 

Last Notes:

  • If you think you do not have enough sauce, have another bag of cheese and butter on standby! Some people like their pasta drenched and others not so much- cook according to your guest!

  • You do not have to season chicken with the jerk seasoning if you know your crowd is not a fan of spice! I recently made this for my niece and nephew and the consistent flavor I gave was garlic and cheese!
